Baked Martini schnitzel

Ingredients for 4 servings:

  • 4 pork schnitzels
  • 2 onions
  • 500 g mushrooms, fresh
  • 1 cup of cream
  • 250 g grated cheese (e.g. medium-aged Gouda)
  • 1 shot of vermouth (Martini bianco)
  • nutmeg
  • salt and pepper
  • Paprika powder
  • Clarified butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Slice the onions and the mushrooms. Fry the schnitzels in clarified butter until lightly browned on both sides. Remove from the pan and place in a well-greased casserole dish. Season with salt, pepper, paprika, and nutmeg. Sauté the onions and mushrooms in the pan and deglaze with a generous splash of Martini. Top with the cream and spread it all over the schnitzels. Cover with grated cheese and bake at 150°C for about 30 minutes. French fries, fried potatoes, or even pasta are good accompaniments.
