Ingredients for 2 servings:

  • 1 small onion(s)
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 can of tomatoes (plum tomatoes), Italian, diced or pureed
  • ½ liter broth
  • 1 shot of dry white wine
  • Salt and pepper, freshly ground
  • possibly rice, cooked
  • possibly croutons
  • basil, fresh

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Italian tomato soup

Sauté the finely chopped onion and minced garlic in olive oil. Deglaze with the broth, add the diced tomatoes, and simmer over low heat for 15 minutes. Season with salt and pepper and add a splash of dry white wine. If desired, you can add cooked rice as a garnish. Garnish with torn basil leaves and perhaps some croutons on the prepared plates. If you’re not using croutons, serve the soup with fresh white bread.
