Simple sweet potato salad

Ingredients for 2 servings:

  • 2 m.-sized sweet potatoes
  • Water
  • 2 tsp, heaped salt
  • 1 onion(s)
  • 4 gherkins or pickled cucumbers
  • 2 tsp, levelled pepper, freshly ground
  • 2 tbsp rapeseed oil

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 55 minutes

Wash and dice the sweet potatoes, then cook them in a little water with salt until al dente. Combine the sweet potatoes in a bowl with the diced cucumber, diced onion, pepper, and oil and let them sit for 1-2 hours. It’s also delicious eaten straight away.
