Curry noodles with carrots and spring onions

Ingredients for 5 servings:

  • 500 g spaghetti or pasta of your choice
  • 1 bunch of spring onions
  • 1 kg carrot(s)
  • 1 cup of cream
  • 6 tsp curry powder
  • 4 tbsp soy sauce
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brush a wok with 2 tablespoons of olive oil and heat. In the meantime, wash the vegetables and peel the carrots. Slice the leek into thin rings, and grate or thinly slice the carrots. Add to the wok and fry over medium heat. Meanwhile, cook the noodles according to the package instructions. Deglaze the vegetables with the cream and simmer gently. Then season with the soy sauce, curry powder, salt, and pepper. Drain the cooked noodles, add to the wok, and toss with the sauce.
