Bergische Waffle Cake

Ingredients for 1 servings:

  • 4 eggs
  • 180 g sugar
  • 1 packet of vanilla sugar
  • 200 g flour
  • 1 packet of baking powder
  • some water
  • 4 eggs
  • 200 g butter
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 375 g flour
  • 1 tsp baking powder
  • some milk
  • 1 jar sour cherries, well drained
  • 1 pack of rice pudding (ready-made product for 500 ml milk)
  • 2 cups of cream
  • 2 packs of cream stiffener

Working time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours

This cake requires several steps, which you can complete in any order. For the waffles: Mix a batter and bake them with a waffle iron. You only need three, but the rest will definitely be eaten. For the sponge cake: Separate the eggs. Beat the egg whites until stiff and stir them into the egg yolks with a little water, sugar, and vanilla sugar. Mix the flour and baking powder and fold in. Pour the mixture into a greased springform pan and bake in a preheated oven (180 degrees Celsius fan-assisted) for about 25 minutes (use a toothpick to test if it’s cooked). Let the base cool and cut horizontally. For the filling: Prepare the rice pudding according to the package instructions or make it fresh. Whip the cream with cream stabilizer until stiff. Now all the ingredients are ready, it’s time to layer the cake: Place a sponge cake base on the bottom, then spread a thin layer of half the rice pudding, then spread the cherries on top, then spread half the cream on top. Then add another sponge cake layer, spread the remaining rice pudding, and then cover everything with cream, including the sides. Place waffle pieces on top. I place a whole waffle in the center and surround it with individual hearts. Cut the cake into about 12 slices. If you like, you can garnish the cake with cherries or cinnamon and sugar. I start with the cherry juice, thicken it with vanilla pudding, and garnish the cake with it; it tastes great, too. The cake goes perfectly with a Bergisches Land coffee table.
