Chicken roulades with feta

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 1 onion(s), red
  • 2 bunches of basil
  • 50 g feta cheese
  • 15 g butter
  • 25 g pine nuts
  • 1 tbsp olive oil
  • 150 ml dry white wine
  • Salt and pepper, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Roll out the chicken breast fillets thinly between cling film. Peel and finely chop the onion. Rinse the basil with cold water, pat dry, and pick off the leaves. Finely crumble the feta cheese. Heat the butter in a pan. Sauté the onion for 10 minutes. Spread it over the fillets. Then add the basil, feta cheese, and pine nuts. Roll up the fillets and secure them with toothpicks. Heat the oil in a pan. Sear the chicken roulades on all sides for 5 minutes. Add the wine and season. Cover and simmer over low heat for 20 minutes. Slice before serving. Serve with new potatoes.
