Ratatouille with turkey

Ingredients for 4 servings:

  • 500 g turkey schnitzel
  • 1 eggplant(s)
  • 2 zucchinis
  • 2 bell peppers
  • 2 onions
  • 1 clove(s) garlic
  • 4 tbsp oil
  • Salt
  • pepper
  • 4 tomatoes
  • 250 ml broth
  • 4 tbsp sour cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the meat. Wash and trim the eggplant, zucchini, and bell peppers. Chop everything into small pieces. Peel the onions and garlic. Slice the onions into rings. Press the garlic through a garlic press. Heat the oil on high. Brown the meat. Season with salt and pepper and remove. Sauté the vegetables in the frying oil, turning occasionally. Pour boiling water over the tomatoes and peel off the skin. Dice the tomatoes and add them. Add the stock, bring to a boil, and simmer covered on the hob (1) or automatic hob setting (5-6) for about 10 minutes. Add the meat after about 5 minutes. Season everything with salt and pepper. Add a dollop of sour cream and sprinkle with pepper.
