Pasta with tomato, sweet potato and carrot sauce

Ingredients for 2 servings:

  • 1 garlic bulb(s)
  • 2 shallots
  • 5 m.-sized carrot(s)
  • 1 sweet potato(s)
  • 1 can tomatoes, chopped, approx. 400 g
  • some red wine
  • salt and pepper
  • Sugar
  • e.g. basil
  • e.g. Parmesan
  • 200g pasta

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

For this delicious and filling pasta sauce, dice the vegetables, sauté briefly in a little olive oil, and deglaze with a little red wine. Simmer the vegetables in the red wine for a while, then add the tomatoes. Let the vegetables simmer for at least half an hour. Meanwhile, cook the pasta according to the package instructions. Once the vegetables are slightly soft, puree with a hand blender and season with pepper, salt, and a little sugar. Sprinkle with basil and Parmesan cheese before serving, if desired.
