Pasta with broccoli and pepper-tomato sauce

Ingredients for 3 servings:

  • 300 g pasta
  • 4 bell peppers, any color
  • 4 tomatoes
  • 300 g broccoli
  • olive oil
  • 1 tsp honey
  • 2 tbsp ketchup, or more
  • Herbs of Provence
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Wash the tomatoes and peppers. Quarter the tomatoes and place them on one half of the baking sheet. Roughly dice the peppers, mix them with olive oil in a bowl, and place them on the other half of the baking sheet. Braise in the oven at 180°C for about 30 minutes. Wash the broccoli, tear them into florets, sear them in a pan with olive oil, and then boil them in water until soft. Puree the peppers and tomatoes with a hand blender and season well. Combine the broccoli and sauce in the pan and heat through. Cook the pasta and toss with a dash of olive oil. Divide the pasta between deep plates and serve with the sauce on top.
