Fried asparagus in pepper sauce with fish fillet

Ingredients for 4 servings:

  • 1 kg asparagus, white
  • 1 large onion(s)
  • 2 garlic cloves
  • 250 ml hollandaise sauce
  • 1 tbsp tomato paste
  • 2 tsp ground pepper
  • 1 chili pepper(s), pitted
  • 1 tbsp olives, chopped
  • 1 tbsp herbs of your choice, chopped
  • salt and pepper
  • some milk, if necessary
  • 4 fish fillets, e.g. cod fillets
  • ½ lemon(s)
  • salt and pepper
  • some flour for dusting
  • Butter for frying
  • some olive oil

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Cut the asparagus into bite-sized pieces. Finely chop the onion and garlic. Heat a little olive oil and fry the asparagus over medium heat for 15 minutes. Then add the onion and garlic and fry for another 5 minutes. Then add the hollandaise sauce and stir in the tomato paste. Add the peppercorns and finely chopped chili and season with salt and pepper. Then add the chopped herbs and let everything simmer over very low heat. If the sauce is too thick, thin with a little milk. Season the fish with salt and pepper and drizzle with lemon juice. Dust with a little flour and fry in the butter. Serve with rice or simply some baguette. Grilled meat also works well instead of the fish.
