Ingredients for 25 servings:
- 700 g wild boar meat
- 250 g smoked wild boar ham
- 3 rolls, stale
- 1 onion(s), red
- 2 garlic cloves
- 1 tbsp extra virgin olive oil
- 1 tbsp marjoram
- 1 tsp salt (mushroom salt)
- 1 tbsp vegetable stock powder
- ½ tsp sweet paprika powder
- ½ tsp black pepper, freshly ground
- 3 eggs
- breadcrumbs
- Clarified butter
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Cut the meat and ham into cubes and mince them (finely). Tear the bread rolls into pieces and soak them in water, then squeeze them dry. Peel and finely dice the onion and garlic, and fry them in hot oil until translucent. Knead the minced meat with the bread rolls, onion, garlic, spices, and eggs into a smooth dough, preferably by hand. Form plum-sized balls, flatten them, roll them in breadcrumbs, and fry in hot clarified butter. Makes about 25-30.
