Potato pancakes from the oven

Ingredients for 1 servings:

  • 1 ½ kg potatoes
  • 2 m.-sized onion(s)
  • 4 eggs
  • 2 tbsp Flour, heaped
  • 200 g ham, diced
  • salt and pepper
  • 200 g crème fraîche or sour cream
  • Parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely grate the peeled potatoes and onions. Knead with the eggs, flour, and 3/4 of the ham cubes. Season with salt and pepper. Place the potato mixture on an oiled baking sheet (approx. 35 x 40 cm) and spread evenly. Bake in a preheated oven at 200°C/175°C fan for approx. 30 minutes until golden brown. Cut into approx. 20 pieces. Fry the remaining ham cubes without fat until crispy. Stir the crème fraîche or sour cream until smooth and spoon in dollops onto the potato pancakes. Sprinkle with ham cubes and parsley.
