Ingredients for 4 servings:
- 1 apple
- 3 red bell peppers
- 500 g chicken schnitzel
- 1 can pineapple, drained weight approx. 300 g
- 1 can peach(s), drained weight approx. 300 g
- 1 jar Asian sauce, sweet and sour
- 250 g long grain rice
- 600 ml orange juice
- 1 carrot(s)
- ½ jar mango chutney
- n. E. Spice(s), e.g. curry powder, paprika powder, curry paste, sambal olek, lemon juice
- e.g. herbs, for decoration
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
with pineapple, peach and chicken
Chop all ingredients: dice the apple, pineapple, and peach; dice half of the bell peppers and cut the other half into short strips; and thinly slice the carrot and chicken. First, sear the chicken, deglaze with orange juice, and add the Asian sauce. Mix well. Then add the remaining ingredients, except the sliced bell peppers. Let it reduce slightly. Cook the rice. Season the curry to your liking with mango chutney and spices, such as curry, paprika, sambal oelek, red curry paste, or lemon juice. Add the bell pepper strips just before serving. Serve the curry with rice and garnish with fresh herbs, if desired.
