Chinese noodle stir-fry

Ingredients for 2 servings:

  • 200 g pasta (capellini)
  • 2 red bell peppers
  • 2 carrots
  • 1 zucchini
  • 1 onion(s)
  • some soy sauce
  • 1 tbsp oil
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

ideal for the wok

Cook the noodles in salted water for about 5 minutes until al dente. Meanwhile, quarter the zucchini, then slice and season with salt (to remove the bitterness). Slice the bell pepper, carrots, and onion into strips. Sauté the onions in a little oil in a wok. Add the bell pepper and carrots and fry briefly. Then add the zucchini and fry briefly. Season with soy sauce to taste and fry the vegetables for about 2 minutes – do not overcook; the vegetables should still be nice and crunchy. Once the noodles are done, drain and simply toss them with the vegetables in the wok.
