Pork loin with mushrooms and plums

Ingredients for 4 servings:

  • 4 pork chops (loin of pork)
  • 500 g mushrooms or chanterelles
  • 4 plums
  • 1 bunch of onions, young
  • 1 kg vegetables (summer vegetables), mixed
  • salt and pepper
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Season the pork loin pieces and lightly fry them in hot oil in a pan. Braise them with water and a dash of red wine for about 30 minutes. Then add the finely chopped mushrooms, prunes, and spring onions and cook for about 10 minutes. Cook the summer vegetables in a casserole and serve with the pork loin. Serve the pan juices separately, if desired.
