Pork fillet – pot

Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 2 tbsp margarine
  • 2 stalk(s) leeks
  • 2 apples
  • 1 tbsp curry
  • ½ liter vegetable broth
  • Salt
  • 250 g mushrooms
  • 3 tomatoes
  • 1 tsp cornstarch
  • some water

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Dice the meat and fry in the margarine. Slice the leek into rings. Peel, core, and slice the apples. Add the leek, apples, and curry powder to the meat and fry, then add the vegetable stock. Simmer for about 10 minutes, until the meat is tender. Halve the mushrooms and quarter the tomatoes. Simmer both for 5 minutes. Mix the cornstarch with a little water to thicken the mixture. Season with salt. This goes very well with rice and mango chutney.
