Ingredients for 4 servings:
- 400 g chicken breast
- 1 eggplant(s)
- 200 g sweet Gorgonzola
- 1 cup broth or water
- 1 cup of cream
- salt and pepper
- olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Dice the chicken breast and sauté in olive oil. Dice the eggplant and add it. Deglaze with 1 cup of water or broth and simmer for about 10-15 minutes. Add the cream and bring to a boil. Then add the chopped Gorgonzola and stir until dissolved. Season to taste with salt and pepper. Be careful with the salt, especially if using broth. Fresh tagliatelle goes perfectly with this!
