Ingredients for 1 servings:
- 150 g goat meat from the neck area, cut into pieces of approx. 1.5 x 1.5 x 0.8 cm
- 1 tbsp oil
- 1 m.-sized garlic clove(s), pressed or finely chopped
- 1 tbsp lemon juice
- 1 pinch of salt
- 1 pinch(s) brown sugar
- 3 tbsp orange juice
- 1 tbsp soy sauce, light
- 1 tbsp ketchup, manis
- 1 tbsp oil
- 1 small onion(s), red, sliced
- 1 garlic clove(s), cut into small cubes or pressed
- 10 g peanuts, unsalted peanuts or 5 g peanut butter
- 10 ml coconut water, from a fresh fruit or milk
- 1 tsp palm sugar, brown
- 1 pinch of salt
- 1 pinch(s) of sugar
- 1 tsp lemon juice
- 1 tbsp sauce (kecap asin)
- 1 tbsp sugar
- 2 tbsp orange juice
- 2 small onions, red, quartered
- 1 tsp spice paste (sambal bajak)
- 2 tbsp ketchup
Instructions
Working time approx. 45 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes
Satay with goat meat
Combine the marinade ingredients in a large bowl and mix well. Add the meat and mix well. Marinate for 30 minutes. For the kacang sambal, heat the oil in a pan. Add the onions and garlic and roast until fragrant. Add the remaining sauce ingredients and simmer for about 5 minutes. Remove from the heat and let cool slightly. Strain and pour the liquid into a blender. Blend, adding the peanuts a little at a time, until the mixture becomes creamy and runny. Season with a pinch of salt. To prepare the satay skewers, place 4 to 5 pieces of marinated goat meat flat on a wooden skewer at least 20 cm long, leaving about half of the skewer free. Combine the remaining meat marinade with 1 tablespoon of ketchup, 1 tablespoon of light soy sauce, and 3 tablespoons of orange juice, and use for grilling. Grill the satay skewers at high heat on each side until the meat turns chocolate brown. Brush the skewers several times with the remaining marinade and finally coat with the honey sauce. Stop grilling. Place the sambal and marinating ingredients on one side of an oblong plate and add the satay skewers on the other side. Serve with nasi putih or nasi goreng with white or fried rice.
