Ingredients for 3 servings:

  • 2 lemons, juice
  • 4 tbsp oil
  • 3 tsp oregano, dried
  • 2 garlic cloves
  • 400 g minced meat, mixed
  • ½ onion(s)
  • 1 garlic clove(s)
  • ½ bunch coriander, fresh
  • ½ tsp cumin
  • salt and pepper
  • 400 g beef liver
  • 9 lamb chops
  • 27 Pepper , Greek
  • ½ onion(s)
  • 400g tzatziki

Instructions

Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 45 minutes; Total time approx. 3 hours 45 minutes

For the marinade, mix the lemon juice with the oil and oregano. Crush the garlic cloves and add them. Rinse the beef liver thoroughly, pat dry, and cut into 9 flat slices, each approximately 4 x 4 cm in size. Then place the pieces and 1/3 of the marinade in a sealable container and let it sit in the refrigerator for about 2 hours. For the minced steaks, finely dice the onion, press the garlic, finely chop the coriander, and add it to the minced meat along with the cumin. Mix everything well and season with salt and pepper. Divide the mixture into three equal portions and shape each portion into an oblong patty. Let it rest in the refrigerator for about 2 hours. Rinse the lamb chops, pat dry, and mix them with 1/3 of the marinade in a sealable container. Let it sit in the refrigerator for about 2 hours. Mix the pepperoni with 1/3 of the marinade in a sealable container and then let it marinate in the refrigerator for about 2 hours. Preheat the grill to maximum heat. Mix all marinated pieces of meat thoroughly in their respective containers before grilling. Thread the pepperoni onto flat skewers. Reserve the marinade from the storage container. Grill the skewers on both sides over high heat on the grill until the pepperoni have toasted spots. Distribute 9 pepperoni on each plate, drizzle with the rest of the reserved marinade, and serve as an appetizer with half of the tzatziki. Place the minced steaks on the hot grill and grill well on all sides. Then keep warm either in the oven or in a roasting pan on the side of the grill. Grill the chops on both sides and keep them warm as well. Heat the embers in the grill again if necessary. Grill the liver until very hot, about 2-3 minutes per side. Arrange 3 chops, 1 minced steak, and 3 pieces of liver on each grill plate. Sprinkle fresh onion rings from the second half of the onion over the liver. Serve the meat with tzatziki and a side dish of your choice. It goes well with fries, grilled cheese, a dry Greek red wine, and a Greek side salad.
