Ingredients for 6 servings:
- 2 cans of coconut milk
- 1 bag of curry paste, Thai, red or green
- 2 tsp paprika powder, red, yellow
- 350 g mushrooms
- 2 onions
- 2 zucchinis
- 4 carrots
- e.g. juice (mango-passion fruit)
- Salt
- curry powder
- oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash and chop the vegetables. Heat the oil in a large pan or pot. Briefly fry the curry paste in hot oil. Add the carrots and onions first, then the other vegetables, and finally the mushrooms. Sauté everything. Deglaze with the juices and add the coconut milk, bring to a boil, and season to taste. Rice is delicious with it. Tip: You can, of course, vary the vegetables or even fry the meat with it. I deglaze with the juices and maybe add more juice later, depending on my taste. Sometimes I also add curry powder. Massaman curry paste is particularly delicious.
