Cypriot fish in foil

Ingredients for 4 servings:

  • 4 portions of fish fillet(s) of your choice
  • 1 zucchini
  • 200 g cherry tomatoes
  • 2 onions
  • 2 garlic cloves
  • 200 g feta cheese
  • chili
  • some lemon juice
  • 50 g bacon, diced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven to 200°C. Wash the fish and pat dry, drizzle with lemon, and season lightly (salt and pepper). Wash the zucchini and tomatoes, slice the zucchini, and halve the tomatoes. Peel and slice the onions, peel and crush the garlic. Mix the onions, tomatoes, zucchini, garlic, diced feta, and bacon, and season lightly with salt and pepper. Spread out four sufficiently large pieces of aluminum foil and place a fish fillet on each. Then spread the vegetable mixture on top and season with chili. Seal the aluminum foil and cook in the oven for about 30 minutes. We always serve this with tomato rice or simply fresh baguette.
