Fried potatoes with pumpkin, plums and goat cheese

Ingredients for 4 servings:

  • 6 potatoes
  • 250 g butternut squash
  • 1 onion(s)
  • 50 g goat cheese
  • 6 plums
  • rosemary
  • Thyme
  • olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Boil the potatoes, peel them, and let them cool. Cut the pumpkin into small pieces or slices, as well as the onions. Halve the plums. Heat a little olive oil in a pan, not too hot, and add the pumpkin flesh and potatoes. Shortly after, add the finely chopped onions and herbs and cook everything. When the potatoes and pumpkin are soft and well browned, add the halved plums and let them stand for a few more minutes; the plums shouldn’t become mushy. Serve on plates and garnish with the goat cheese. These roasted potatoes with plums and goat cheese are a super quick and inexpensive dish. Even children will enjoy them.
