Roasted green asparagus with mushrooms, fried cheese and Parmesan

Ingredients for 2 servings:

  • 1 kg asparagus
  • 500 g mushrooms
  • 2 onions
  • 3 cloves garlic
  • 100 g cheese (fried or pan-fried cheese)
  • 3 tbsp olive oil
  • 50 g Parmesan
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean the asparagus and peel if necessary, cut into 2-3cm pieces, and sauté for 10 minutes in 3 tablespoons of olive oil. Clean the mushrooms, add them, and sauté for another 5 minutes. Now add the cheese and onions and sauté for another five minutes. Finally, add the garlic and salt, turn off the heat, and sprinkle the Parmesan cheese over the vegetables. Season with pepper, and serve hot.
