Green spelt spread with tomatoes

Ingredients for 8 servings:

  • 2 large beefsteak tomatoes
  • 1 small onion(s), red
  • 1 tbsp olive oil
  • 150 ml vegetable stock
  • 80 g green spelt, finely ground
  • ½ tsp herbs de Provence
  • 1 tbsp tomato paste
  • some salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Blanch the tomatoes in hot water and peel off the skin. Finely dice, removing the seeds. Peel and finely chop the onion. Heat olive oil in a pan and fry the onion until translucent. Pour in the vegetable stock and stir in the green spelt groats. Simmer the groats over low heat for 3-5 minutes, remove the pan from the heat, and cover and let stand for another 5 minutes. Season the mixture with Provençal herbs, tomato paste, salt, and pepper; mix well. Purée until fine, if desired. Fold in the diced tomatoes. Tip: You can use fresh herbs instead of dried herbs. In this case, however, the spread should not be stored for longer than two days.
