Pork fillet with green asparagus and potatoes

Ingredients for 2 servings:

  • 500 g pork fillet(s)
  • 1 bunch of green asparagus
  • 400 g potatoes
  • 200 g cherry tomatoes
  • 1 bunch of spring onions
  • salt and pepper
  • chili flakes
  • olive oil
  • Clarified butter
  • Grana Padano or Parmigiano Reggiano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 10 minutes

Wash and trim the meat. Preheat the oven to 100°C (212°F). Heat clarified butter in a pan and sear the meat all over. Cook the meat in the oven for 55 minutes. Then let it rest for 5 minutes and carve it. Season with salt and pepper. Wash the potatoes, boil them in salted water for 6-8 minutes, depending on their size, and halve or quarter them if desired. Peel the asparagus as desired. Wash the tomatoes. Wash the spring onions and slice them into rings. Heat olive oil in a pan and sauté the potatoes for 5 minutes. Add the asparagus, season with salt, pepper, and chili flakes, and sauté for 5 minutes. Add the cherry tomatoes and spring onions and cook for about 5 minutes. Finally, garnish with Parmigiano Reggiano or Grana Padano.
