Linguine with fresh mushrooms and tomatoes

Ingredients for 1 servings:

  • 70 g pasta (linguine)
  • salt water
  • 150 g tomatoes
  • 100 g fresh mushrooms, variety according to taste
  • 1 tsp sunflower oil
  • 15 g cream cheese, natural
  • a few stalks of curly parsley
  • some chili powder
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook the linguine in salted water according to the package instructions. Trim the mushrooms, but do not wash them. Chop the tomatoes into chunks and sauté them with the mushrooms in sunflower oil. Deglaze with the vegetable stock, season with salt and pepper. Let it reduce slightly. Meanwhile, drain the cooked pasta and then add it to the mushroom sauce and let it simmer. Then add the cream cheese and stir in the parsley.
