Ingredients for 4 servings:
- 800 g potatoes
- 2 tsp vegetable oil
- 2 red bell peppers
- 2 green bell peppers
- 1 onion(s)
- 100 g lean ham, diced
- 4 eggs
- 1 jar of pickled gherkins, 360 g drained weight
- Salt
- pepper
- Paprika powder
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Peel the potatoes and dice them. Heat the oil in a large pan, add the diced potatoes, season with salt and pepper, and simmer with the lid on for about 20 minutes. Roughly dice the bell pepper and onion, add them to the potatoes along with the diced ham, and fry for another 10 minutes. Beat the eggs with the paprika and add to the pan. Stir until set. Season with salt and paprika to taste and serve with pickles. 7 PP per person.
