Rice – corn – tuna – salad

Ingredients for 4 servings:

  • 1 bag of rice (brown rice)
  • 200 g corn, frozen or canned
  • 1 can tuna in its own juice
  • 5 tbsp mayonnaise
  • 3 tbsp Balsamic vinegar, white
  • salt and pepper
  • 1 bunch of parsley or arugula
  • possibly red bell pepper(s), diced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

wholesome salad for main meals

Cook rice according to instructions and transfer to a larger bowl. Gently combine with corn and shredded tuna. Mix salad mayonnaise and vinegar, season with spices, pour over rice, corn, and tuna, and fold in. Chop parsley or arugula and sprinkle over the mixture. Sprinkle with diced red bell pepper, if desired.
