Tortellini salad with peach and tuna

Ingredients for 1 servings:

  • 1 kg tortellini, refrigerated (with ricotta and spinach filling)
  • 1 large can of peach(s)
  • 1 can tuna, in its own juice
  • 1 jar Miracle Whip
  • 1 tbsp broth, granulated
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cook the tortellini according to the package instructions, drain, and let cool. Cut the peaches into cubes (approx. 1×1 cm). Mix the Miracle Whip, granulated broth, tuna, salt, and pepper, plus a little of the peach liquid, to make a dressing. (Season with salt and pepper to taste, and add a little more granulated broth if desired.) Pour the dressing over the cooled tortellini and fold in the peach pieces. Let it chill in the refrigerator for at least 1 hour. Then adjust the seasoning if necessary.
