Quick zucchini pan with pesto

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 2 red bell peppers
  • 5 onions
  • 5 tsp green pesto
  • Salt
  • Paprika powder
  • herbs, Italian
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the onions, slice them into rings, and fry them in olive oil. Meanwhile, wash the zucchini and cut them into thin slices. Peel the bell peppers and slice them into strips. Add both to the onions and fry for about 5 minutes. Add the pesto and seasonings and stir gently. A super quick and delicious summer dish.
