Kohlrabi schnitzel

Ingredients for 4 servings:

  • 2 kohlrabi
  • 1 large egg(s)
  • ½ tsp paprika powder, hot
  • 1 pinch of nutmeg
  • salt and pepper
  • Flour
  • Breadcrumbs
  • lots of fat for frying, e.g. Rama Culinesse

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

In three bowls, place the flour, the egg with spices, and the breadcrumbs. Peel the kohlrabi and cut into slices. Blanch them briefly in hot water and then pat dry. Whisk the egg. Coat the kohlrabi slices first in the flour, then in the egg, and finally in the breadcrumbs. Press the breading down lightly. Fill a large frying pan with cooking fat and heat until hot. Add the kohlrabi schnitzels. The schnitzels should be swimming in the fat. When they are nice and golden brown on both sides, they are done. Place the schnitzels on a plate lined with kitchen towels and let them drain. Keep the schnitzels warm in the oven at 70 degrees Celsius until all the schnitzels are cooked.
