Ingredients for 4 servings:
- 1 m.-large cauliflower
- 2 eggs
- 9 tbsp flour
- 9 tbsp milk
- Salt
- Vegetable broth, instant
- pepper
- Clarified butter or oil for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Wash the cauliflower, trim off the leaves and tough stems. Grate the cauliflower florets finely to medium-coarsely. You can grate the stems, but they don’t have to be. Separate the eggs. Add 2 egg yolks, flour, and milk to the grated mixture, mix, and season well with salt or vegetable stock and pepper. Beat the egg whites until stiff and fold into the mixture. Season to taste. The finished batter will be thick and runny. Heat clarified butter or oil in a pan. Using a tablespoon, form small patties directly in the fat and fry until golden brown. Serve as a side dish with boiled potatoes, mashed potatoes, a mixed salad or ketchup, spring quark, and white bread.
