Spicy-sweet spaghetti "Multikulti" with ajvar, tomatoes, peperoncini and honey

Ingredients for 2 servings:

  • 200g spaghetti
  • some olive oil
  • 6 cloves garlic, sliced ​​as finely as possible
  • 250 g tomatoes, peeled, roughly chopped
  • some tomato sauce (Polpa die Pomodoro)
  • some tomato paste
  • 1 tbsp ajvar
  • 1 tsp honey
  • e.g. Peperoncini
  • salt and pepper
  • 50 g cheese (Grana Padano) or Parmiggiano

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Boil the spaghetti water. At the same time, start making the sauce. Sauté the garlic in olive oil. Then reduce the heat and add the tomatoes, ajvar, honey, and peperoncini. Season with salt and pepper and stir continuously until the spaghetti is al dente. Season again to taste. Remove the sauce from the heat and add the drained spaghetti, still wet, to the sauce in the pan. Stir well to ensure the sauce, oil, and honey are fully combined with the spaghetti. Then portion the sauce and sprinkle with freshly grated cheese.
