Fish on bell peppers

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 bell peppers, red
  • 250 g tomatoes
  • 3 tbsp oil
  • 1 tsp paprika powder, hot
  • 1 tsp sweet paprika powder
  • salt and pepper
  • 2 cod fillets, 200 g each
  • 3 stalks of parsley

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Halve the onion lengthwise and cut crosswise into thin half rings. Finely chop 1 garlic clove. Clean, quarter, and deseed 2 red bell peppers, then cut the quarters crosswise into strips. Dice 250g tomatoes. Heat 2 tablespoons of oil in a saucepan. Sauté the onions over medium heat for 5 minutes until translucent. Briefly fry the garlic. Stir in the bell pepper strips and fry for 2 minutes. Remove the pan from the heat. Stir in 1 teaspoon each of hot and sweet paprika. Mix in the tomatoes and season with salt. Cover and bring to a boil, then sauté over medium heat for 10 minutes. Heat 1 tablespoon of oil in a medium-sized pan. Season 2 cod fillets, 200g each, all over with salt and pepper. Fry in the hot oil for 3-4 minutes on each side. Pick and chop the leaves from 3 sprigs of parsley. Arrange the fish fillets on the bell peppers and sprinkle with parsley.
