Ingredients for 2 servings:
- 2 eggs
- 40 g butter
- some lemon zest
- 50 g erythritol (sugar substitute)
- 200 g quark
- 50 g cream cheese
- 120 g blueberries, frozen or fresh
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
can be varied with other berries, sugar-free
Separate the eggs and beat the egg whites until stiff peaks form. Beat the butter with lemon zest and erythritol. Gradually add the egg yolks. Then stir in the quark and cream cheese. Finally, carefully fold in the beaten egg whites. Pour everything into a baking dish measuring approximately 15 x 20 cm and top with the blueberries. Bake in a preheated oven at 180°C (top/bottom heat) for approximately 30 minutes.
