Pasta with zucchini and basil

Ingredients for 2 servings:

  • 250 g pasta
  • 1 onion(s)
  • 1 piece(s) of dried meat or ham cubes
  • 2 large zucchini
  • salt and pepper
  • lots of basil, fresh or frozen
  • 1 tbsp sour cream
  • Parmesan, grated, to taste
  • some olive oil (for lean dried meat or ham)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the zucchini, jerked beef, and onions. Cook the pasta. If the jerked beef or ham is lean, add a little olive oil to a pan, add the jerked beef and onions, and fry briefly. Then add the zucchini and fry for about 5-7 minutes. Mix the cooked zucchini with the cooked pasta, add the basil, sour cream, and Parmesan cheese, and season with salt and pepper. The original recipe calls for crème fraîche instead of sour cream; I use sour cream because of its lower fat content, and it tastes just as good. For me, this is a classic summer zucchini-season dish that’s quick and easy to make, and my kids love it too.
