Ribbon noodles with smoked salmon and spring onions

Ingredients for 2 servings:

  • 250 g tagliatelle pasta
  • 2 pinches of salt
  • 2 bunch spring onions
  • 2 tsp olive oil
  • 4 tbsp balsamic vinegar, lighter
  • 400 ml vegetable stock
  • 6 tbsp cream cheese, with herbs/light
  • 2 slice(s) smoked salmon
  • Black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

WW suitable

Cook the tagliatelle in boiling salted water according to the package instructions until al dente, drain, and refresh. Finely slice the spring onions. Heat oil in a pan and sauté the onion rings for about 3 minutes. Deglaze with vinegar and stock and stir in the cream cheese. Cut the salmon into strips, stir in, and season generously with salt and pepper. Stir in the pasta, heat through, and serve.
