Quick red cabbage soup

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 tbsp oil
  • 1 tbsp brown sugar
  • 500 ml orange juice
  • 3 grains of allspice
  • 4 juniper berries
  • ½ stalk(s) cinnamon
  • 2 carnations
  • 450 g red cabbage, frozen
  • 2 tbsp cranberry compote
  • Salt and pepper, freshly ground
  • Crème fraîche

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the onion, fry it in oil, and caramelize it with the sugar until light. Pour in the orange juice and bring to a boil. Place the allspice, juniper berries, cinnamon stick, and cloves in a tea strainer, seal, and add. Add the red cabbage, season with salt and pepper, and let the soup simmer for about 20 minutes. Discard the spices, refine the soup with cranberry compote, and purée it finely. Ladle into soup bowls and serve with a spoonful of crème fraîche.
