Ingredients for 4 servings:
- 5 eggs
- 200 ml water
- 500 g spelt flour
- 1 tsp salt
- 1 tbsp olive oil
- 3 carrots
- 1 onion(s)
- 400 g mushrooms
- 4 king oyster mushrooms
- 150 ml vegetable stock
- 150 g cheese, e.g. Emmental
- salt and pepper
- chives
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
vegetarian, for the Thermomix
For the spaetzle, prepare a spaetzle dough using eggs, water, flour, salt, and olive oil. Add all ingredients to the Thermomix and knead for 3 minutes on the kneading setting, until the dough bubbles. Scrape the spaetzle into boiling water and then drain. Heat oil in a pan, slice the carrots into sticks and sauté, then add the sliced onion and mushrooms and sauté. Add the spaetzle and deglaze with 150 ml vegetable stock. Fold in the cheese. Sprinkle with chives and serve.
