Herring skewer with beetroot

Ingredients for 2 servings:

  • 250 g herring fillet(s)
  • 200 g sour cream
  • 125 g beetroot
  • 2 small cucumbers
  • 2 shallots
  • ½ apple
  • salt and pepper
  • Cucumber juice, optional

Working time approx. 15 minutes; Total time approx. 15 minutes

Recipe from childhood

First, chop the herring, shallots, beetroot, gherkins, and apple. Add the sour cream to the bowl, season with salt and pepper, and optionally add a little pickle juice. Now add all the ingredients and mix. The herring stew can be eaten immediately or left to marinate for a day. It’s delicious with bread or potatoes.
