Ingredients for 4 servings:

  • 4 carrots
  • e.g. jacket potatoes, also from the previous day
  • 4 large tomatoes
  • 2 tbsp mixed herbs, frozen
  • salt and pepper
  • curry powder
  • some butter or oil
  • possibly sour cream

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Chop the carrots and tomatoes. Peel and chop the potatoes. Sauté the carrots in butter or oil. After a while, add the potatoes and fry. Finally, add the tomatoes. Season with herbs and spices. If desired, add sour cream.
