Mashed potatoes leftovers

Ingredients for 4 servings:

  • 500 g mashed potatoes from the previous day
  • 3 tbsp breadcrumbs
  • 3 tbsp cheese, grated, e.g. Gouda
  • 1 egg(s)
  • 0.33 bell pepper(s)
  • 1 tbsp chives or chopped parsley
  • 1 tbsp clarified butter

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

without meat

Chop the bell peppers, mix well with the mashed potatoes, breadcrumbs, cheese, egg, and chives, and let the mixture rest for about 30 minutes. Shape into small or large balls as desired and fry them slowly in clarified butter until golden brown. I’ve also mixed in leftover potato pancakes.
