Cauliflower salad with egg

Ingredients for 4 servings:

  • 1 head of cauliflower
  • 3 eggs
  • 1 head of lettuce
  • 100 g ham or beer sausage
  • 1 cup of yogurt
  • 3 tbsp oil
  • e.g. salt and pepper
  • e.g. mustard
  • n. B. sugar
  • e.g. parsley or chives

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Clean the cauliflower, cut it raw into small florets, steam it in lightly salted water until slightly tender, and let it cool. Prepare a spicy salad dressing with yogurt, oil, mustard, salt, pepper, sugar, and plenty of chopped herbs. Mix in the well-washed lettuce, finely shredded, and strips of ham or beer sausage. Carefully mix the cauliflower florets into the spicy salad dressing and finally add a quarter of a boiled egg. Serve with buttered whole-grain bread.
