Italian vegetable pasta salad

Ingredients for 4 servings:

  • 400 g wholegrain pasta
  • salt water
  • 1 bell pepper(s), yellow
  • 2 tomatoes
  • 1 small zucchini
  • 1 ball(s) of mozzarella
  • Vinegar, possibly balsamic vinegar
  • oil
  • 1 ½ tsp mustard
  • Salt
  • Sugar
  • 1 bunch of basil
  • 1 small onion(s)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta in salted water according to the package instructions until al dente, then rinse and drain. Wash and finely chop the vegetables. Blanch the tomatoes in hot water, peel, deseed, and dice. Dice the mozzarella as well. Mix the vinegar, oil, mustard, sugar, and salt to make a salad dressing. Mix all ingredients with the still-warm pasta and let it sit for 1 hour. Stir in the finely chopped basil before serving. Garnish with onion rings. If desired, you can also use balsamic vinegar.
