original Greek recipe
First, the most important thing: Line the pan with a strip of aluminum foil. This is very important for the later flavor. Now place the feta cheese on the aluminum foil. Sprinkle the basil and oregano over the feta cheese. Next, add the finely diced onion to the pan, some on top of the feta cheese, some to the side. Then add the tomato, preferably sliced. Finally, drizzle everything with olive oil and cover the pan with a second strip of aluminum foil. Place the pans on the stovetop and cook for a few minutes over medium-high heat (ideally until the onions are lightly browned or the cheese is cooked through). This should take a few minutes. And the feta cheese is ready. White bread makes a great side dish. If you’re handy, you can now remove the cheese from the pan with the aluminum foil without putting a hole in the foil. This saves you having to wash the pan.
