Spicy cucumbers

Ingredients for 4 servings:

  • 4 pickled cucumbers
  • ½ onion(s), red
  • 2 garlic cloves
  • 2 tbsp dill, finely chopped
  • 1 ½ tsp salt
  • 3 tsp brown sugar
  • ½ tsp mustard seeds
  • ¼ tsp chili flakes
  • 1 tsp pepper
  • 1 tbsp balsamic vinegar, lighter

Instructions

Working time approx. 15 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 15 minutes

Trim the ends of the cucumbers. Peel, but leave the green strips, and then slice. Peel and finely chop the onion and garlic. Place the cucumbers in a sealable container. Add the onion, garlic, and dill. Stir in the salt, sugar, mustard seeds, chili flakes, pepper, and balsamic vinegar. Close the container and shake well. Let it sit in the refrigerator for at least 5 hours, shaking frequently. Transfer the cucumbers, including the liquid, to a preserving jar.
