Vegan vegetable pan with spelt noodles

Ingredients for 4 servings:

  • 300 g spelt pasta, e.g. penne
  • 2 large eggplants
  • 1 onion(s), red
  • 250 g mushrooms, brown
  • some olive oil or sunflower oil
  • some salt and pepper
  • possibly vegetable stock powder
  • 300 g cocktail tomatoes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Dice the eggplant and slice or quarter the mushrooms. Peel and dice the onion. Cook the pasta according to the package instructions. Meanwhile, heat the oil in a pan and sauté the onion, eggplant, and mushrooms one at a time. Halve the tomatoes and add them. Season with salt and pepper. If desired, add a little vegetable stock powder. Drain the cooked pasta well and mix well with the vegetables. Do not add any water. The vegetables release plenty of moisture.
