Ingredients for 3 servings:
- 400 g mushrooms
- 1 onion(s)
- 1 garlic clove(s)
- 2 tbsp tomato paste
- 1 can tomatoes, chopped
- 200 ml tomatoes, pureed
- salt and pepper
- Paprika powder, sweet
- oregano
- Vegetable stock powder
- 300 g whole wheat spaghetti

vegan Bolognese alternative
Chop the mushrooms in a food processor or by hand. Dice the onion and mince the garlic. Sauté the diced onion, chopped mushrooms, and garlic, season, add the tomato paste, and mix thoroughly. Add the chopped tomatoes and passata and simmer for 5-10 minutes. Meanwhile, cook the pasta, drain, and serve. Top with vegan pasta topping or Parmesan cheese, if desired.
