Maya's Turkey Curry

Ingredients for 3 servings:

  • 125 g rice
  • 1 red bell pepper(s)
  • 1 bunch of spring onions
  • 250 g sprouts (mung bean sprouts)
  • 300 g turkey breast
  • 2 tbsp soy sauce
  • 250 ml vegetable stock
  • curry powder
  • 2 tbsp olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the rice according to the instructions. Wash the mung bean sprouts, wash the bell peppers and cut into approximately 2 cm pieces, wash the spring onions and cut into approximately 1 cm rings. Pat the turkey dry and cut into approximately 3 cm pieces. Heat the olive oil in a high-fat pan and briefly brown the turkey. Deglaze with the soy sauce. Then add the vegetables, stir briefly, and pour in the vegetable stock. Cook for 5 minutes with the lid on. Then add the rice and season with curry. This dish is also suitable for children if you go easy on the curry.
