Oatmeal nut cookies

Ingredients for 1 servings:

  • 100 g wheat flour
  • 1 tsp baking powder
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 2 eggs
  • ½ bottle of rum flavoring
  • 125 g margarine
  • 75 g oat flakes, wholegrain
  • 75 g oat flakes, fine
  • 3 tbsp beetroot
  • 100 g hazelnuts, ground or chopped
  • 3 tbsp sultanas or raisins if required

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix the flour and baking powder in a bowl. Add the sugar, vanilla sugar, eggs, rum flavoring, and margarine. Mix with the whisk attachment on a mixer, first on speed 1, then for about 3 minutes on the highest speed until a smooth dough forms. Then stir in the oats, beetroot, and nuts with a wooden spoon, but do not mix with the mixer again. Tip: If you like, add 3 tablespoons of previously soaked sultanas or raisins. You can soak them for 30 minutes or a little longer in orange juice or rum, or just water. Using 2 teaspoons, transfer the dough to a baking sheet lined with baking paper and flatten the cookies slightly. Bake for about 15 minutes in a preheated oven at 180°C (top/bottom heat). I made 3 trays of 18 cookies each.
